One-Pot Chipotle Chili

Topped with a little shredded cheddar cheese or sour cream, this flavorful chili is a no-fail weeknight recipe.

Ingredients

  • 1 tbsp butter or olive oil
  • 1 onion diced
  • 3 garlic cloves minced
  • 1 lb ground beef
  • 2 tbsp ground cumin
  • 2 tsp chili powder
  • 2 tsp chipotle powder
  • 1 tsp crushed red pepper flakes
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp tomato paste
  • 15 oz can great northern beans or pinto beans
  • 15 oz can kidney beans
  • 15 oz can black beans
  • 28 oz diced tomatoes
  • 2.5 cups low sodium beef broth or beef bone broth

Instructions

  • Heat butter or olive oil in a large pot or Dutch oven over medium heat.
  • Add diced onion to the pot, and sauté until tender.
  • Add ground beef to pot and brown, breaking up any large chunks.
  • Add minced garlic and cook until fragrant.
  • Turn the heat down to low, and add seasonings.
  • Add the tomato paste, beans, tomatoes, and beef broth. Stir to combine all ingredients.
  • Simmer chili on medium-low heat for 20-25 minutes, stirring occasionally to prevent sticking. If the chili starts to get too thick, add 1/2 cup of water to loosen.
  • Serve the chili hot and add your favorite toppings.
